Chewy Oatmeal Bars: A Delight for Breakfast or Snack Time
This recipe provides a delicious energy boost to start your day or recharge during the afternoon! Made with “La Céréalière” Brandt, I’m also sharing how to make these bars in the oven!

Oats: 160 g

Flour: 125 g

Brown Sugar: 125 g

Salt: 3 g

Ground Cinnamon or Mixed Spices: 1/4 teaspoon

Chopped Nuts (e.g., pistachios, peanuts, almonds, cashews): 100 g

Chocolate Chips: 100 g

Maple Syrup: 120 ml

Vegetable Oil: 120 ml

Vanilla Extract: 1 tablespoon

Medium Egg: 1 item

Preheat the oven to 180°C (350°F). Line a rectangular baking dish (the same one you use for brownies) with parchment paper. You can also use silicone molds like those for mini cakes.

In a large bowl, mix the oats, flour, bran or wheat germ, brown sugar, salt, and spices thoroughly. In another bowl, whisk the egg with the oil, maple syrup or honey, and vanilla extract, then pour this mixture over the dry ingredients. Add the chopped nuts and raisins or chocolate chips. Mix well with a wooden spoon, then press the mixture together with your hands.

Fill your mold (or silicone impressions) or the slots of your cereal bar machine (if using, you may need to bake in batches). Press the dough firmly with the back of a spoon.

To finish
Bake for 25 to 30 minutes until the top is golden (I set the machine for 30 minutes). Let it cool for 10 minutes before removing and cutting into regular rectangles; or remove from molds and let cool completely on a wire rack. Store them in an airtight container. They are delicious on the day they are made but even better 24 hours later!
