This is a delightful recipe for indulgent jam cookies, perfect for your holiday snacking.
Ingredients
- 200g (about 1 cup) of unsalted butter, softened
- 150g (about 3/4 cup) of granulated sugar
- 1 large egg
- 1 teaspoon of vanilla extract
- 300g (about 2 1/2 cups) of all-purpose flour
- 100g (about 1/2 cup) of fruit jam (your choice)
- A pinch of salt
Instructions
- Preheat your oven to 180°C (350°F).
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing well to combine.
- Gradually add the flour and salt, stirring until the dough comes together.
- On a floured surface, roll out the dough to about 1/4 inch thick.
- Use cookie cutters to cut out shapes, and place half of the cookies on a baking sheet lined with parchment paper.
- Make a small hole in the center of the remaining cookies to create windows for the jam filling.
- Spoon a small amount of jam into the center of each cookie with a hole.
- Top the jam-filled cookies with the cut-out cookies, pressing slightly to seal.
- Bake for 10-12 minutes, or until lightly golden.
- Allow the cookies to cool completely before serving.
