Coffee Mousse: A Light and Flavorful Dessert

Whisk the egg yolks with the granulated sugar. Add the fresh cream and cook as you would a custard (without boiling). When the mixture thickens, remove from the heat and transfer to a bowl. Add the natural coffee flavor and mix well. Let it cool.

Beat the egg whites until very firm. Gently fold them into the cooled cream mixture. Divide the mousse into serving cups and refrigerate for at least 4 hours. When ready to serve, top with a dollop of whipped cream and garnish with a few coffee beans and bitter cocoa powder.
