Spiced Orange and Clementine Salad
This refreshing and light citrus salad is the perfect way to conclude a meal on a sunny note. The natural sweetness of the oranges and clementines is enhanced by a delicately spiced syrup with notes of vanilla, nutmeg, cinnamon, and cloves. The addition of imperial mandarin adds a subtle hint of alcohol that elevates the entire dish.

Using a peeler, remove the zest from two oranges and cut it into fine julienne strips. - 2
Bring 30 cl of water to a boil with the sugar and all the spices. Add the orange zest and boil for 5 minutes. Add the imperial mandarin and boil for an additional minute, then remove from heat. - To finish
Peel the oranges and clementines, then cut them into wedges.
Arrange them in serving dishes and pour the syrup over the top.
Refrigerate until ready to serve.
