Prepare the Dough
Preheat the oven to 160°C (320°F). In a bowl, whisk together the soft butter and sugar until the mixture is creamy. Add the egg and vanilla extract, mixing well. Incorporate the flour, baking powder, and salt, then mix again briefly without overworking the dough. Finally, fold in half of the M&M’s.

Baking
Form a ball with the dough, then flatten it into a round shape about 1 cm thick on a baking sheet lined with parchment paper. Distribute the remaining M&M’s on top, pressing them in lightly to help them adhere to the dough. Bake for 20 minutes and allow to cool on a wire rack.

Serving
When the cookie comes out of the oven, it will be soft and appear undercooked, but don’t worry—that’s normal! It will be perfect after cooling.
