Making the dough
Preheat the oven to 180°C (350°F). In the bowl of your mixer, combine the butter, sugar, egg, and flour. Knead until you have a homogeneous dough. Divide the dough into two portions and add cocoa to one of them. Wrap in cling film and refrigerate for at least 1 hour.

Shaping the leaf cookies
Take pieces of dough (white and cocoa) weighing 7 g each and shape them into small logs about 4 cm long. Combine the two small logs. Pinch the ends to form a leaf shape.

Finishing the cookies
Place them on a Silpat mat or parchment paper. Create leaf veins with a knife and dip them in sugar.
