Instructions
- Preheat your oven to 210°C (thermostat 6-7). In a bowl, combine the self-raising flour and yeast. Add the soft butter and mix with a wooden spoon until the mixture resembles breadcrumbs. Add the sugar and chocolate chips.
- In a measuring cup or large glass, mix together the milk and eggs. Pour this mixture into the bowl and stir just enough to combine the flour. The batter should be lumpy.
- Pour the batter into mini muffin tins or regular muffin tins lined with paper cups.
- Bake for about 15 minutes for mini muffins or 25 minutes for regular muffins, or until they are well risen, golden, and firm to the touch.
