Salad with Feta and Mint
This refreshing summer salad can serve as either a starter or a main dish, depending on the proportions you choose. Among the flavors highlighted in this preparation, sesame oil (available at Asian grocery stores) plays an important role.

Ingredients

Medium Zucchini

Cherry Tomatoes

Mint

Lime

Honey

Sesame Oil (or Olive Oil)

Preparation
- 1Preparation of the Zucchini and Red Onion
Peel the red onion and slice it as thin as possible (using a mandoline or food processor). Set aside. Wash, dry, and grate the zucchini (preferably using a food processor) with a coarse grater. Place the grated zucchini in a kitchen towel and squeeze out as much water as possible over the sink. Set aside.
- 2Preparation of the Feta, Tomatoes, and Mint
Wash and dry the cherry tomatoes. Cut them in half or quarters. Wash and dry the mint: remove the leaves and chop. Set aside. Cut the feta into cubes. Set aside.
- 3Preparation of the Dressing
Squeeze the lime, mix the juice with honey, and finally emulsify with sesame oil (or olive oil).
- Finishing Touches
At the last moment, place the drained and squeezed zucchini along with the sliced red onion in a large salad bowl. Mix everything together. Pour in the dressing, mix again, and then add the feta, tomatoes, and mint. Mix one last time and serve as soon as possible.
